Ingredients:

  • 2 cup rolled oats
  • 2 cup water
  • 1 medium banana
  • 1 tbsp raw sugar, or other sweetener (I use agave)
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup blueberries

 

Place all ingredients in a blender and blend until smooth. Let stand a few minutes; if batter becomes too thick, add enough additional water to make batter easily pourable. Pour onto a medium heated skillet and cook until bubbly and brown on the bottom, flip and cook until golden brown.  These will be more dense than regular pancakes and may require a longer cooking time than regular pancakes do.  Makes approx 10 pancakes.
