Ingredients:

  • 1 cup uncooked orzo
  • 1/4 cup sun-dried tomatoes, chopped (rehydrated in hot water if necessary)
  • 1 cup feta cheese, crumbled
  • 1/4 cup red onion, chopped
  • 1/4 cup green bell pepper, chopped
  • 1/4 cup red bell pepper, chopped
  • 1/4 cup yellow bell pepper, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons green olives, chopped
  • 2 tablespoons red wine vinegar
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Cook orzo according to package directions and drain. Combine all ingredients in a large bowl and mix well. Chill before serving. Makes 4 servings
