Dinner last night: quinoa salad with apple, arugula & craisins, with baked sweet potatoes on the side.

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 2 small apples
  • handful of craisins
  • arugula
  • balsalmic vinegar
  • salt & pepper to taste

Add the uncooked quinoa and 2 cups of water to a medium pot. Bring to a boil, then reduce the heat to a simmer and cook for 15 minutes. Turn off the heat and fluff with a fork. Add salt and pepper to taste.  When cooled slightly, turn out into a large bowl.

Chop apples and toss in mixing bowl. Add in argula, craisins, and cheese (if desired). Add quinoa to mixing bowl. Top with balsalmic vinegar or lemon juice. Serve!
