Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • Arugula
  • Sliced strawberries
  • Honey goat cheese (from Trader Joe’s)
  • Balsalmic vinegar
  • Salt and pepper to taste

This is one of my favorite summer salads!

Add the uncooked quinoa and 2 cups of water to a medium pot. Bring to a boil, then reduce the heat to a simmer and cook for 15 minutes. Turn off the heat and fluff with a fork. Add salt and pepper to taste.  When cooled slightly, turn out into a large bowl.

Mix sliced strawberries, arugula and honey goat cheese in mixing bowl. Add desired amount of quinoa to mixing bowl. Top with balsalmic vinegar. Serve!
