Recipe: Put chicken breasts in crockpot - season with lime and pepper. Let chicken sit in crockpot for 6-8 hours. Once chicken is done, cook 1 cup quinoa (according to package instructions). I always add a bit of salt and pepper to my finished cooked quinoa.

Other ingredients: canned corn (from Trader Joes), sliced tomato and avocado, arugula

Mix corn, tomato, avocado, argula, chicken and quinoa together. Serve!
