Ingredients:

Sauce:

  • 1 cup hot water
  • 1/4 cup tahini (sesame-seed paste)
  • 3 tablespoons fresh lemon juice
  • 1/8 teaspoon salt
  • 2 garlic cloves, minced

Patties:

  • 1 cup chopped red onion
  • 1/2 cup chopped fresh parsley
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 2 (15 1/2-ounce) cans chickpeas (garbanzo beans), drained
  • 4 garlic cloves, minced
  • 1/2 cup dry breadcrumbs, divided
  • 4 teaspoons olive oil, divided
  • 6 mini pitas OR whole wheat English Muffins
  • 3 cups chopped romaine lettuce
  • 2 cups chopped tomato
  • 2 cups sliced peeled cucumber
  • 1/2 cup finely chopped red onion

My sister Michelle sent me this recipe she found on How Sweet Eats. Excited to try these.

Ingredients:

  • 1 cup uncooked quinoa, rinsed
  • 2 cups vegetable or chicken stock
  • 1 cup cooked chickpeas
  • 1/2 cup freshly grated provolone cheese
  • 1/4 cup panko bread crumbs
  • 1/2 cup chopped carrots
  • 2 green onions, thinly sliced
  • 2 garlic cloves, minced
  • 1 large egg + 1 egg white, lightly beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons olive oil
  • 12 whole wheat English muffins
  • 2 avocados, sliced for topping
  • 1/2 cup chipotle mayo, for topping

Last night Greg made sweet potato veggie burgers. This is one of my favorite recipes. Instead of eating as a burger, I ate cut my sweet potato veggie patty up and added to an arugula salad with chopped pear and goat cheese.

On Sunday, Greg barbecued the rest of the turkey burgers on our grill. I had to take a photo of his ultimate turkey burger!

I had this breakfast both days this weekend: toasted whole wheat English muffin with goat cheese, honey & arugula and sliced pear on the side.

My life has been a a bit crazed lately, and sometimes I don’t get home till 9 or 10pm at night. Last night’s late night dinner: toasted whole wheat English muffin with goat cheese, honey, sliced avocado and lots of arugula.

I cannot wait to try this recipe!!

Ingredients:

For the Burgers
 
  • 1 lb ground chicken
  • 2 Tablespoons chopped green onion
  • 1/4 cup chopped cilantro
  • 1/2 cup panko
  • 1/2 of the peanut sauce (recipe below)
  • Romaine Lettuce
  • Ciabtta Rolls or whole wheat English muffins
For the Peanut Sauce
 
  • 3 Tablespoons smooth peanut butter
  • 1 Tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon sesame oil
  • 1 teaspoon sriracha
  • 1 teaspoon agave nectar (or honey)
  • 1/4 teaspoon ground ginger

For the Mango Salsa

  • 1 mango, cubed
  • 1/2 jalapeno, seeds removed and minced
  • 1 garlic clove, minced
  • 1/4 cup chopped cilantro
  • Juice of 1/2 a lime
  • 1/4 teaspoon sriracha
  • salt & pepper to taste

After power yoga on Saturday, I had a toasted whole wheat English muffin with goat cheese, honey and arugula.

The first day of Spring is tomorrow. Can’t wait to me THESE turkey burgers with turkey bacon for a Spring BBQ.

Ingredients – Makes 4 Servings:

  • 1 pound ground turkey
  • 1 tablespoon and 1 teaspoon seasoned bread crumbs
  • 1 tablespoon and 1 teaspoon finely diced onion
  • 5/8 egg whites, lightly beaten
  • 1 tablespoon and 1 teaspoon chopped fresh parsley
  • 3/8 clove garlic, peeled and minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • Package of turkey bacon
  • Toppings for burger: Avocado, Onions, Spinach/Arugula, Tomatoes, Mustard, BBQ sauce
  • Whole Wheat English muffins

I just made these Sweet Potato Veggie Burgers with Avocado and they were AMAZING! I made a few tweaks to the recipe I found on Marvelous Kiddo via the vegan blog Healthy Happy Life. Here is my updated recipe (with photos):

Ingredients:

  • 2 cans garbanzo beans, drained
  • 5 medium sweet potatoes, peeled/baked/mashed (about 2 cups)
  • 2 tsp maple or agave syrup
  • 1 tsp lemon pepper seasoning
  • 1 egg white
  • 1/4 cup wheat flour
  • plentiful Panko crumbs
  • olive oil for pan
  • For burgers: avocado, hummus, English Muffins, arugula, olive oil, pepper

The perfect post yoga breakfast sandwich on a Saturday morning: scrambled egg, goat cheese, avocado and arugula on a toasted whole wheat English muffin.

Ingredients:

  • 1 whole wheat English muffin (Thomas or Ezekial) sliced in half
  • Humus (any flavor)
  • Fresh baby spinach
  • Red onion, sliced thin
  • Tomato, sliced
  • Cucumber, thinly sliced
  • Red bell pepper, thinly sliced
  • Feta, crumbled (optional)

Toast English muffin.  Spread a generous amount of humus on one side. Begin to layer all of the fresh veggies and top with a good sprinkle of the crumbled feta. Top with other half of the English muffin.
