Ingredients:
- whole wheat flat bread – or for low carb – use Trader Joe’s low-carb tortillas
- 3 tablespoons olive oil
- 6 cups fresh spinach leaves
- 6 ounces garlic and herb flavored goat cheese, crumbled
- 2 6 ounce jar marinated artichoke hearts, drained and chopped
- 1 medium tomato, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
I found this amazing recipe on the blog Spoon Fork Bacon. For full recipe click HERE. I am going to make this next week. I love the ingredients: spicy shredded chicken, honey, avocados, tomatoes, all topped with light cilantro yogurt sauce.
Dinner last night was Trader Joe’s Thai Chicken Pizza. We added chopped yellow bell pepper and tons of arugula on the side. Delicious!

- 1 cup cooked chicken
- 1 jar Trader Joe’s Peanut Satay Sauce
- 1/2 cup carrots, shredded
- 2 tbsp unsalted Peanuts, chopped
- 4 green onions, cut lengthwise
- 1 cup low-fat shredded mozzarella
- Red pepper flakes & freshly ground black pepper
I am currently craving this Salad Pizza from Abbot’s Pizza on Abbot Kinney in Venice. Ingredients: chopped mixed greens, onion, tomato and basil topped with feta cheese and avocado with undercurrents of lemon dressing.
Ingredients:
- Trader Joe’s whole wheat pizza dough
- 1 large sweet potato, thinly sliced, about 1/4 inch thick
- 1/2 red onion, sliced
- 1 1/2 teaspoons olive oil
- Salt and pepper to taste, for seasoning potato slices and onion
- 1 1/2 cups chopped kale
- 1 tablespoon balsamic vinegar
- 1 tablespoon garlic olive oil (or regular olive oil)

Last night I went with my boyfriend to a new restaurant in Santa Monica, called Stella Rosa. It is quickly becoming one of my new favorite local dinner spots. After splitting two appetizers, we shared the Kale Pizza. It was amazing! I’m inspired to cook my own healthy kale pizza…
Ingredients:

1 prepared pizza crust (Trader Joe’s makes a great crust)

3-4 stems kale, washed and torn into small pieces

3-6 T garlic, crushed

3 T olive oil

1/2 tomato, sliced very thin

Ingredients:
- 4 whole wheat Thomas English muffins
- olive oil
- tomato slices
- 2 hard-cooked eggs, sliced
- grated mozzarella
- oregano
- kosher salt
Make hard-cooked eggs. Toast 8 English-muffin halves and place on a cookie sheet. Drizzle each with olive oil, then layer on tomato slices, hard-cooked egg slices (1/2 an egg each), and a little grated mozzarella. Sprinkle with oregano and salt. Broil 5 minutes/until the cheese melts. Makes 4 servings.

- Fried Sage (optional): 4 fried sage leaves per pizza
Butternut Squash mixture:
- 1 small butternut squash. Peeled, scooped of seeds, and diced. You will use about 1/2 cup diced butternut squash per pizza.
- 1 1/2 tablespoons fresh thyme
- 2 small shallots, minced
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2-3 tablespoons extra-virgin olive oil
- 4 tablespoons balsamic vinegar
- 4 tablespoons Grand Marnier
Cheese mixture:
- 1/2 cup ricotta, divided
- 1 four-ounce goat cheese log, divided
- pinch salt
- pinch black pepper

Ingredients:
- Trader Joes/Whole Foods whole wheat pizza dough or homemade focaccia dough, enough to cover a baking sheet
- olive oil to lightly coat baking sheet – 1 to 2 tablespoons
- one peach
- 5 slices prosciutto, torn or cut into smaller pieces
- 1 tablespoon rosemary, roughly chopped
- 2 – 3 ounces goat cheese, crumbled
Set oven to 500F. Stretch out dough on lightly oiled baking sheet. Top with sliced peaches, prosciutto, rosemary and goat cheese. Bake until dough is golden, about 10 to 15 minutes.

- 4 oz. Montasio cheese, grated or thinly sliced (substitute parmesan or manchego or a mix if you like)
