  • 1 low-carb tortilla (I used Trader Joe’s Sonoma Carb Cutting Tortillas – only 60 calories)
  • 1 egg, scrambled (with a pinch of salt & pepper)
  • 1/2 avocado
  • Goat cheese
  • 2 slices tomato

Frittatas are great for dinner but make a great breakfast or brunch too.  Also perfect to make on a Sunday, and have for a low-carb breakfast or lunch during the work week.

Ingredients:

  • 2 whole eggs
  • 8 large egg whites
  • 1 tsp olive oil
  • 1/2 red onion, finely chopped
  • 3 scallions, chopped
  • 10 oz frozen chopped spinach, thawed
  • 2 oz crumbled feta
  • 2 tbsp Parmigiano-Reggiano, grated
  • salt and freshly ground pepper
  • other options: add red/green pepper, asparagus, zucchini

I saw this amazing recipe on Spoon Fork Bacon. Can’t wait to make these…

Ingredients:

Meatballs -

  • 1 pound ground turkey
  • 1/3 cup oats
  • 1 egg, lightly beaten
  • 1 garlic clove, minced
  • 2 tablespoons Worchestershire sauce
  • 2 tablespoons sage, minced
  • 1 tablespoon rosemary, minced
  • 1 tablespoon thyme, minced
  • 1 tablespoon chives, thinly sliced
  • salt and pepper to taste

  • 1 medium sweet potato (about 6 oz), peeled and chopped
  • 1/2 red onion, diced
  • 1/2 teaspoon salt

My sister Michelle sent me this recipe she found on How Sweet Eats. Excited to try these.

Ingredients:

  • 1 cup uncooked quinoa, rinsed
  • 2 cups vegetable or chicken stock
  • 1 cup cooked chickpeas
  • 1/2 cup freshly grated provolone cheese
  • 1/4 cup panko bread crumbs
  • 1/2 cup chopped carrots
  • 2 green onions, thinly sliced
  • 2 garlic cloves, minced
  • 1 large egg + 1 egg white, lightly beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons olive oil
  • 12 whole wheat English muffins
  • 2 avocados, sliced for topping
  • 1/2 cup chipotle mayo, for topping

Last night Greg made sweet potato veggie burgers. This is one of my favorite recipes. Instead of eating as a burger, I ate cut my sweet potato veggie patty up and added to an arugula salad with chopped pear and goat cheese.

My mom recently bought me muffin tins. Since I don’t ever make muffins, I figured this would be a great use for those tins! I saw this recipe on Food Gawker via The Dinnervine.

Ingredients:

  • 3/4 cup finely chopped zucchini
  • 1/4 cup chopped fresh spinach
  • 1/4 cup finely chopped red or white onion
  • 1/4 cup sun-dried tomatoes (rinsed from oil, and chopped)
  • 2 cloves garlic, minced
  • 2 tbsp fresh basil, finely chopped
  • 1/3 cup feta cheese
  • 2 tbsp shredded mozzarella
  • 2 tbsp grated parmesan cheese (for topping)
  • 5 egg whites
  • 3 egg yolks
  • Salt and pepper to taste
  • Paprika for topping
  • Extra virgin olive oil (for sautéing veggies in skillet)

One of my favorite healthy living/food blogs is Peanut Butter Runner. She made this simple sandwich the other day, which inspired me to find a recipe for a mayo-free egg salad sandwich.

Ingredients:

  • 8 large hard-boiled eggs
  • 3 tablespoons part-skim ricotta cheese
  • 3 tablespoons plain Greek yogurt
  • 2 teaspoons Dijon mustard
  • 2 teaspoons chives, finely chopped
  • 1/4 red bell pepper, finely chopped
  • coarse salt & pepper
  • 2 cups arugula
  • 8 thin slices whole grain bread
  • sprouts/tomatoes (optional)

I just made these Sweet Potato Veggie Burgers with Avocado and they were AMAZING! I made a few tweaks to the recipe I found on Marvelous Kiddo via the vegan blog Healthy Happy Life. Here is my updated recipe (with photos):

Ingredients:

  • 2 cans garbanzo beans, drained
  • 5 medium sweet potatoes, peeled/baked/mashed (about 2 cups)
  • 2 tsp maple or agave syrup
  • 1 tsp lemon pepper seasoning
  • 1 egg white
  • 1/4 cup wheat flour
  • plentiful Panko crumbs
  • olive oil for pan
  • For burgers: avocado, hummus, English Muffins, arugula, olive oil, pepper
