I am making this recipe for a 1920′s themed book club…

Ingredients:

  • 1/2 cup flaked coconut
  • 1/2 cup chopped almonds

I have been skiing with my family in Big Sky, Montana for the past 5 days. On the second night, Greg and I made everyone dinner.

Our Menu:
Barbecued Chicken Breasts with sage, thyme and rosemary; Baked Sweet Potatoes drizzled with cinnamon and 2 tsps butter; Jicama, Tomato & Avocado salad with croutons and light balsamic dressing

Ingredients:

  • 2 baking potatoes (about 1 1/2 pounds), peeled and cut into chunks (3 1/3 cups)
  • 1 (10-ounce) package frozen whole-kernel corn
  • 2 celery stalks, chopped
  • 2 carrots, peeled and cut into chunks (1 cup)
  • 1 onion, cut into 1/2-inch-thick slices
  • 2 garlic cloves, minced
  • 1 cup bottled salsa
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon freshly ground black pepper
  • 1 pound skinless, boneless chicken breast
  • 4 skinless, boneless chicken thighs (about 10.5 ounces)
  • 2 1/2 cups fat-free, lower-sodium chicken broth
  • 4 (6-inch) fresh corn tortillas, cut into strips
  • Chopped fresh parsley (optional)

I found this amazing recipe on the blog Spoon Fork Bacon. For full recipe click HERE. I am going to make this next week. I love the ingredients: spicy shredded chicken, honey, avocados, tomatoes, all topped with light cilantro yogurt sauce.

 

 

Tonight we had homemade pesto atop whole wheat pasta. We mixed cooked spicy chicken sausage into the pasta. On the side: spinach salad with candied walnuts, feta cheese and dried craisins.

Homemade Pesto:

  • 1 ounce Parmigiano-Reggiano cut into 1/2-inch pieces
  • 1 clove garlic
  • 2 cups packed fresh basil leaves, washed and dried
  • 2 to 4 tablespoons extra virgin olive oil
  • 2 tablespoons lightly toasted pine nuts
  • 1/4 teaspoon salt

AMAZING Sunday Night Dinner:

  • 1 cup cooked quinoa with goat cheese
  • Grilled chicken sausage (from Trader Joe’s)
  • Grilled onions and green peppers
  • Half an avocado

Dinner Tonight: slow-cooked chicken breast marinated with lime, quinoa, arugula, corn, avocado and tomato salad.

I cannot wait to try this recipe!!

Ingredients:

For the Burgers
 
  • 1 lb ground chicken
  • 2 Tablespoons chopped green onion
  • 1/4 cup chopped cilantro
  • 1/2 cup panko
  • 1/2 of the peanut sauce (recipe below)
  • Romaine Lettuce
  • Ciabtta Rolls or whole wheat English muffins
For the Peanut Sauce
 
  • 3 Tablespoons smooth peanut butter
  • 1 Tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon sesame oil
  • 1 teaspoon sriracha
  • 1 teaspoon agave nectar (or honey)
  • 1/4 teaspoon ground ginger

For the Mango Salsa

  • 1 mango, cubed
  • 1/2 jalapeno, seeds removed and minced
  • 1 garlic clove, minced
  • 1/4 cup chopped cilantro
  • Juice of 1/2 a lime
  • 1/4 teaspoon sriracha
  • salt & pepper to taste

Dinner last night was Trader Joe’s Thai Chicken Pizza. We added chopped yellow bell pepper and tons of arugula on the side. Delicious!

Ingredients:

  • Trader Joe’s Whole Wheat Pizza Dough
  • 1 cup cooked chicken
  • 1 jar Trader Joe’s Peanut Satay Sauce
  • 1/2 cup carrots, shredded
  • 2 tbsp unsalted Peanuts, chopped
  • 4 green onions, cut lengthwise
  • 1 cup low-fat shredded mozzarella
  • Red pepper flakes & freshly ground black pepper

A great “healthier” appetizer for Super Bowl parties…

Ingredients:

  • 3 ounces light cream cheese, softened
  • 1/4 cup salsa (green or red)
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 2 cloves garlic, minced
  • 3 tablespoons chopped cilantro
  • 2 scallions, chopped
  • 2 cups shredded cooked chicken
  • 1 cup shredded pepper jack cheese
  • 12 (6 inch) corn tortillas (or whole wheat)
  • kosher salt
  • cooking spray

  • 1/4 cup chopped vidalia onion

  • 1/2 cup diced cooked skinless white-meat chicken
  • 1 tbsp chopped fresh cilantro

  • Nonstick cooking spray, preferably olive oil

A great healthy lunch idea. See Recipe HERE.

Last night I made an avocado and artichoke spinach salad. I added goat cheese, dried cranberries, and roasted lemon-pepper chicken with a splash of balsalmic vinegar. It was a very filling, healthy winter salad.
