My life has been a a bit crazed lately, and sometimes I don’t get home till 9 or 10pm at night. Last night’s late night dinner: toasted whole wheat English muffin with goat cheese, honey, sliced avocado and lots of arugula.

I had this for brunch this weekend and need to start making these!

Ingredients:

  •  4 pack of Açaí berry pure (example: Sambazon)
  • 2 cup almond milk (or water)
  • 2 bananas
  • 1 cup frozen strawberries
  • 2 tbsp hemp protein powder

Topping:

  • 1 cup granola
  • 2 handful fresh strawberries and blueberries
  • 4 tbsp hemp seeds

Ingredients:

For vinaigrette
 
  • 1/2 cup white-wine vinegar
  • 1 tablespoon balsamic vinegar (preferably white)
  • 1 large garlic clove, minced
  • 1 1/4 teaspoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup olive oil

For vegetables

  • 1 lb small zucchini, cut crosswise into 3/4-inch-thick slices
  • 1/4 cup olive oil
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon black pepper
  • 3/4 lb cherry tomatoes
  • 1 lb baby eggplant (4 inches long), cut crosswise into 3/4-inch-thick slices
  • 10 oz cremini mushrooms, trimmed
  • 2 yellow bell peppers, cut into 1 1/2-inch pieces
  • 1 large red onion, cut into 1 1/2-inch pieces

  • 4 stalks celery, thinly sliced
  • 1 English cucumber, seeded, thinly sliced
  • 2 scallions (green parts only), thinly sliced

  • 3 tablespoons lemon juice

Ingredients:

  • 1 large yellow bell pepper, julienned
  • 2 tablespoons lemon juice
  • 1/4 cup extra-virgin olive oil
  • Kosher salt and freshly ground black pepper
  • 1 large red bell pepper, julienned
  • 1 large orange bell pepper, julienned
  • 20 radishes, very thinly sliced
  • 6 medium carrots, finely shredded
  • 2 tablespoons lime juice
  • 2 tablespoons orange juice
  • 2 tablespoons grapefruit juice
  • 2 tablespoons raspberry wine vinegar

I’m spending time with family this weekend for Mother’s Day. First up, we are hiking at Zion National Park tomorrow morning!

I cannot wait to try this recipe!!

Ingredients:

For the Burgers
 
  • 1 lb ground chicken
  • 2 Tablespoons chopped green onion
  • 1/4 cup chopped cilantro
  • 1/2 cup panko
  • 1/2 of the peanut sauce (recipe below)
  • Romaine Lettuce
  • Ciabtta Rolls or whole wheat English muffins
For the Peanut Sauce
 
  • 3 Tablespoons smooth peanut butter
  • 1 Tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon sesame oil
  • 1 teaspoon sriracha
  • 1 teaspoon agave nectar (or honey)
  • 1/4 teaspoon ground ginger

For the Mango Salsa

  • 1 mango, cubed
  • 1/2 jalapeno, seeds removed and minced
  • 1 garlic clove, minced
  • 1/4 cup chopped cilantro
  • Juice of 1/2 a lime
  • 1/4 teaspoon sriracha
  • salt & pepper to taste

Scrambled egg, sliced red pepper and goat cheese on a toasted whole wheat English muffin.

Greg made a delicious corn, cherry tomato and avocado salad on Monday night. He used arugula and farmer’s market mixed greens, squeezing fresh lemon juice on top.

Ingredients:

  • 2 cup of arugula
  • 2 cups mixed greens
  • corn kernels from two ears of corn
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1 lemon

After power yoga on Saturday, I had a toasted whole wheat English muffin with goat cheese, honey and arugula.

On Friday we grabbed food to-go from Sauce on Hampton. We had the chopped salad and the turkey meatloaf with quinoa and yellow sweet potatoes. So good!
