Goat Cheese with Parsley & Lemon

Mash up goat cheese in a bowl, add a few squeezes of fresh lemon juice, some lemon zest, and a palmful of chopped parsley (or chives). Mold the mixture into a ball, then sprinkle some salt and drizzle a good olive oil over the top before you serve. It goes great with crackers or vegetables.                       Source: The Kitchn

Goat Cheese & Thyme Dip

  • 200 g goat cheese
  • 1 tbsp olive oil
  • 1 small handful thyme (roughly chopped)
  • 1/3 fresh chili (finely chopped)

Mix all ingredients in a blender. Serve in a small bowl, top with fresh thyme. Source: Green Kitchen Stories
