butternut squash, mozzarella & baby spinach

Ingredients:

  • Roasted Butternut Squash (cut into cubes and slow roasted ’till golden)
  • Mozzarella
  • Baby Spinach
  • Pinenuts (1 table spoon)
  • Mint (2 table spoons)
  • Extra virgin olive oil
  • Balsamic vinegar
  • Salt and pepper
