health nut salad

Ingredients:

  • 2-3 cups mixed salad greens
  • 1 small tomato
  • 1/4 cup cucumber slices
  • Trader Joe’s rosemary Marcona almonds
  • 1/4 of an avocado
  • 1 ounce of Parmesan cheese, freshly grated

Red Wine Vinaigrette

  • 1/4 cup red wine vinegar
  • 1/2 olive oil
  • 1 T dijon mustard
  • 1 t honey or sugar
  • salt & pepper
