solbar chai tea

Last weekend, I spent a relaxing weekend in Napa Valley at the Solage Calistoga. The hotel was amazing. My favorite part of the stay included biking to wineries on the Solage’s beach cruisers, daily yoga and pilates classes, and the complientary chai tea at the front desk. The chai tea was so good, I wanted to include the recipe here:

Chai Tea – A Special Recipe from Solbar’s Michelin Star-Rated Kitchen

  • 1 oz fresh ginger, slicer (unpeeled)
  • 2 T sugar
  • 2 T honey
  • 1/2 vanilla bean, split
  • 1/2 cinnamon stick
  • 1 T cardamom pods, crushed
  • 3 ea whole cloves
  • 1/4 t ground nutmeg
  • 16 oz cold water
  • 2 T assam harmony loose tea

Combine first 8 ingredients in a large heavy pot with the water. Gently bring to a simmer and let it cook for 5 minutes. Stir in tea, remove from heat and let steep for 10 minutes. Strain through chinois and let cool before covering. Store cold, then reheat with an equal amount of whole milk to serve. Makes 2 glasses.
