quinoa salad with pear & goat cheese

Ingredients (makes 1 serving):

  • 1/2 cup quinoa
  • 1 cup water
  • 2 pears
  • crumbled goat cheese
  • spinach
  • craisins
  • balsalmic vinegar
  • salt & pepper to taste

Last night I made this quinoa salad…it only took me about 20 minutes!

Add quinoa and water to a 2 quart pot. Bring water to a boil. Once water is boiling, put the lid on the pot and turn heat to simmer. Let cook for about 10 minutes, or until all water is absorbed.

While quinoa is cooking, chop up 2 pears. Add pears, goat cheese and craisins to mixing bowl. When quinoa is done cooking, season with salt and pepper to taste. Then add the quinoa to mixing bowl. Toss the salad with just enough balsalmic vinaigrette.
