cranberry pomegranate goat cheese poppers

Ingredients:

  • ½ Cup Chèvre Goat Cheese (crumbled, not firmly packed)
  • ¼ Cup Dried Cranberries
  • ¼ Cup Pomegranate Arils
  • ¼ tsp. Cinnamon
  • 1 Tbsp. Maple Syrup
  • 1 Puff Pastry sheet cut into 12 squares
  • Brown Sugar
  • Sea Salt
  • Olive Oil

Preheat oven to 400°. Prepare your puff pastry sheet according to package directions (most likely thaw at room temperature for 40 minutes). Once thawed, cut the puff pastry dough into 12 squares. In a mini muffin/cupcake pan, place a square of puff pastry in each cup and press them gently in to create little bowls.

In a bowl, mix together goat cheese, cinnamon, and maple syrup with a fork. Add cranberries and pomegranates and mix in evenly to the goat cheese. Sprinkle a little pinch of brown sugar on top of each scoop. Spoon 1 Tbsp. of the goat cheese mixture into each pastry cup and fold opposite corners of the dough into the center of each puff to create a little dumpling. Very lightly brush the top of each dumpling with olive oil. Place in the oven for 15 minutes (or until golden brown). When removed from the oven, sprinkle sea salt over the entire pan.
