- Rainbow Quinoa (Trader Joe’s)
- Chopped mushrooms, butternut squash, & zucchini
- Pinch of garlic & onion
- Endive Boats
- Salt and Pepper
- Parmesan cheese (optional)
Cook Quinoa according to package directions. In a pan, sautée the chopped mushrooms, butternut squash, zucchini, adding in a pinch of garlic and onion. Add a touch of salt and pepper. Then mix everything together and spoon it into endive boats. Sprinkle Parmesan cheese on top (if desired).
