chickpea & quinoa veggie burgers

burgerIngredients:

For the tahini sauce:

  • 3 tablespoons olive oil
  • 3 tablespoons tahini
  • 1 1/2 tablespoons lemon juice (about 1/2 a lemon)
  • 2 tablespoons water
  • 1/4 teaspoon kosher salt
  • 1 to 2 cloves garlic, crushed
  • 1 teaspoon maple syrup or honey (optional)

For the pickled red onions:

  • 1/2 red onion, thinly sliced
  • 1 tablespoon red wine vinegar (or any vinegar)
  • Salt

For the burgers:

  • 1 cup cooked quinoa
  • 1 small onion, peeled and roughly chopped
  • 3 or so scallions, ends trimmed and roughly chopped
  • Basil, cilantro, parsley, whatever you like, a small handful
  • 2 teaspoons kosher salt
  • 1 1/2 teaspoons smoked paprika
  • Crushed red pepper flakes, to taste
  • 1 small zucchini, grated
  • Grape-seed oil for frying
  • Naan, lettuce, tahini sauce, pickled red onions, sriracha or other hot sauce (all optional)
